Food Fit for a wedding

Tomorrow our friend Leana is getting married. I made a couple of raw vegan recipes because it is a potluck wedding, and I wanted to make delicious food. Stay tuned for how the food is received and a few wedding highlights.
Rawsome uncooking

Choclate Coconut yummies

1/2 cup cacoa ground in coffee grinder
1/2 cup raw coconut butter
1 cup coconut datelets
1/4 cup agave
1/2 cup shredded coconut
pinch of real salt

Take all ingredients except for shredded coconut, place in food processor.
Mix until smooth. Roll into small balls. put in bag of shredded coconut and shake until coated in coconut. Enjoy fresh or frozen.

Pesto Bites back

This pesto doesn't really bite back, you might expect it to because of the stinging nettles.
2 cups stinging nettles, lames quarters and other green from your yard or farmer market.
1/2 cup raw pumpkin seeds
2 heads of garlic
1/4 inch ginger
1/4 to 1/2 cup rice bran oil
1 teaspoon celtic sea salt

Put all items in food processor and mix thoroughly. Makes a good topping for noodle or rice.
