As Guilt-Free Vegan as You Can Get, No Excuses.

GLUTEN_FREE, DAIRY-FREE, SUGAR FREE AND SOY FREE (YESSS) oh did I say it was VEGAN? Chocolate Cake! and Icing too. Well, let's post the icing first. Coconut Cream Frostingprinter friendly 1 cup coconut milk 1 cup agave nectar pinch sea salt 5 teaspoons arrowroot powder 1 tablespoon water 1¼ cup coconut oil 1/4 tsp Cardomon 1/4 tsp Cinnamon In a medium saucepan, heat coconut milk, agave and salt, simmer for 10 minutes In a small bowl, combine arrowroot and water to form a smooth paste Pour arrowroot mixture into saucepan Mix contents of saucepan with a blender. Whisk vigorously to combine, then bring to a boil, briefly, until shiny Remove pot from heat and very gradually blend in coconut oil with aggressive whisking. Run cold water over the pot. Place pot in freezer refrigerator for 30-40 45-120 minutes, until frosting solidifies and turns white Remove from freezer refrigerator and blend again until fluffy. Serve :) AND NOW (drum roll please) THE CAKE!!! ¾ cup coconut palm sugar 1 cup all-purpose gluten-free flour mix ½ cup almond flour 2 tbsp coconut flour 1/3 cup cocoa powder 1 ½ tsp baking soda ½ tsp sea salt 2 tsp vanilla extract ½ cup extra virgin olive oil 1 cup cold water 2 tbsp apple cider vinegar Preheat oven to 375 degrees Fahrenheit. Ensure oven is fully preheated before you begin to mix the ingredients, as you have to work quickly once you get started. Grease 9" round baking pan well. In a large mixing bowl, whisk together the coconut palm sugar, flour mix, almond flour, coconut flour, cocoa powder, baking soda, sea salt, vanilla extract, oil, and cold water. Blend well. Note that the absorbent nature of the coconut flour will make the batter thicken upon stirring; this is good. Then, add the vinegar and stir immediately. The vinegar and baking soda reaction will cause the mixture to foam up a bit. These ingredients along with their reaction and the subsequent baking process take the place of eggs. Stir quickly and as Lydia says: “Get the pan into the oven as fast as you can.” Bake for 20-25 minutes, until toothpick comes out clean. Remove the pan to a cooling rack, and let it cool completely. Done!

Ife Eats Asparagus!!!

You read correctly. Ife actually reached out with his hands and casually, but consistently began eating pieces of asparagus of of the blue serving plate that was on the table whilst eating supper. WHOA!

Peep this really awesome asparagus recipe that had Ife demanding MORE!

Handful of asparagus
2 T coconut oil
handful of coconut flakes
3 cloves of garlic
small piece of ginger, grated
1 tsp of wheat-free tamari

Break asparagus in 1/2 with your hands. Cut the thicker pieces of the asparagus with a sharp knife. Heat coconut oil in a cast iron skillet, add the larger thicker pieces of asparagus for frying. Add coconut flakes, garlic and ginger. Cook 10 minutes stirring occasionally. Chop the smaller part of the asparagus and add tamari. Cook on low for another 5 minutes to taste.

Happy New Year

It's been so nice for Ife to see all the vegan's coming to stay at our Bed and Breakfast. Asheville Vegan Accomidations. We now offer a few breakfast and dessert options including; raw sprouted granola, banana mash, fruit salad, coconut pancakes, raw caco moose, and pumpkin pudding. Ife enjoyed helping out tasting all these recipies.

Holistic Holiday at Sea

Ife is really becoming a proud vegan child. He has been telling strangers that he is vegan and asking "Who put a chicken and pig in the soup?" Ife : Vegan promoter

Ife often comes to visit me during my break at work, at the French Broad Food Co-op. Today we were enjoying some lunch, when Ife noticed a customer some feet away taking something from the freezer. "I don't eat Meat Ife loudly declared." The customer came closer and tried to justify his planed consumption of animal flesh. Ife preceded to sing him a song he made up; "OHH Ohh Ohh I'm vegan. I eat real food like apples oranges and soup. Ohh Ohh Ohh yummy yummy. I'm vegan."
Way to go young vegan salesman!

Raw Green Summer Soup

3 avocados
2 Tomatoes (organic)
Large handful of cilantro
Corn from the cob scraped off
4 garlic cloves
TBSP of spirulina
TBSP red miso
Handful of dulse
Wedge of lime, squeezed

Put all ingredients into a food processor or blender.
Garnish with hemp seeds.

Raw Butterscotch Bliss Cookies!

These are yummy and raw! I can't stop eatin' 'em! The recipe is as follows:
Ok family. These are called butterscotch bliss balls ad these are out of sight! Ingredients as follows:1C pitted dates1/2 C raw cashews2 T orange zest (the outer part of the orange, not the white bitter part)2 T raw coconut butter/oil, 1t vanilla extract.
Grind cashews in a blender unto a fine powder. Add the rest of ingredients except for orange zest. Blend until smooth and creamy. Roll into balls while folding in orange zest ad coconut flakes.

Garlic Feet!

Ife was having serious congestion with a low-grade fever. We blended up some raw garlic and put oil oon the bottom of his feet first, then the raw garlic blend. Within minutes his body temperature had gone down dramatically. Just the congestion and coughing remained.

Remove the Sweets and the Appetite Returns

Ife had a doctor's visit recently for an ear infection. After seeing his conventional pediatrician, anti-biotics were reluctantly prescribed. We dreaded the idea of adminstering these meds to him. We ended up seeing a wholistic doctor that Ife actually liked. She gave him a check-up and offered us some dietary options and a laundry list of things to do for our Son's optimal health. Some of the things on the list were no dairy (no preoblem, lol), no wheat, limited soy, no sugar and no cookies! It was a daily ritual that we'd give to him as we thought that these were healthy. They are spelt cokies sweetened with agave. The doctor gave us a stern NO. So we did all of the necessary supplements she prescribed and implemented the necessary dietary changes. Surely after a while we noticed some substantial improvement. Not in just his health, but his appetite! Now Ife appears hungry a lot more and he now eats more diverse foods. He is getting stronger and healthier than before and I believe that the power of his immune system is really starting to kick in. We are satisfied with our doctors and will recommend her to anybody!
